2 cups mixed vegetables (broccoli, bell peppers, carrots, snap peas)
3 tablespoons soy sauce
2 tablespoons oyster sauce (or hoisin sauce for a vegetarian option)
1 tablespoon cornstarch (for thickening)
1 tablespoon water
1 teaspoon sesame oil
1 garlic clove, minced
1 teaspoon fresh ginger, minced
Instructions
Prepare the sauce: In a small bowl, combine soy sauce, oyster sauce, cornstarch, water, sesame oil, garlic, and ginger. Whisk until smooth and set aside.
Cook the vegetables: Push the chicken to one side of the pan. Add the remaining tablespoon of oil and the mixed vegetables to the pan. Stir-fry for another 3-4 minutes until the vegetables are tender-crisp.
Combine and thicken: Pour the sauce over the chicken and vegetables in the skillet. Stir well to combine and cook for 2-3 more minutes until the sauce thickens and coats everything evenly.
Serve: Remove from heat and serve immediately over rice or noodles.
