Ingredients
4-6 boneless, skinless chicken breasts
1 Tablespoon light brown sugar, packed
1 Tablespoon smoked paprika
1 Tablespoon coarse salt
½ Tablespoon garlic powder
½ Tablespoon dried oregano
1 teaspoon onion powder
½ teaspoon dried thyme
½ teaspoon ground black pepper
½ teaspoon white pepper
½ teaspoon cajun seasoning
2 Tablespoons olive oil (optional, for a wet rub)
Instructions
Preheat the smoker to 225°F.
Combine the light brown sugar, smoked paprika, coarse salt, garlic powder, dried oregano, onion powder, dried thyme, ground black pepper, white pepper, and cajun seasoning in a bowl.
Mix the dry rub with olive oil for a wet rub, if desired.
Pat the chicken breasts dry and coat with the spice rub.
Place the chicken directly on the smoker grates.
Monitor the internal temperature until it reaches 165°F, about 1.5 to 2 hours.
Let the chicken rest for 3-5 minutes before slicing and serving.
