A spooky, visually striking cake perfect for Halloween, featuring layers of buttermilk cake and Swiss Meringue Frosting.

Ingredients

  • 400 g all-purpose flour
  • 320 g caster sugar
  • 2 tbsp unsweetened cocoa powder
  • 2 tsp baking powder
  • 1 tsp bicarbonate of soda
  • 1/2 tsp fine salt
  • 3 large eggs
  • 190 g vegetable oil
  • 300 g buttermilk
  • 7 g vanilla extract
  • 20 g red liquid food dye
  • 3 batches of Swiss Meringue Frosting
  • 1 kg white cooking chocolate, melted
  • 1 cup corn syrup
  • 2 tbsp liquid red food dye
  • 1/2 tsp strawberry flavoring

Instructions

  1. Prepare your oven to 350°F (175°C) and grease and flour two 9-inch round cake pans.
  2. Mix the flour, caster sugar, cocoa powder, baking powder, bicarbonate of soda, and salt in a large bowl.
  3. Combine the eggs, vegetable oil, buttermilk, vanilla extract, and red food dye in another bowl.
  4. Combine the wet ingredients into the dry ingredients, stirring gently until just combined.
  5. Divide the batter between the prepared cake pans and bake for 30 minutes.
  6. Allow the cakes to cool in the pans for 10 minutes before transferring them to a wire rack.
  7. Prepare the Swiss Meringue Frosting as per the recipe or package instructions.
  8. Assemble the cake by layering the cakes with frosting in between.
  9. Frost the sides and top with frosting, drizzle melted white chocolate and corn syrup mixture over, and decorate as desired.
