A comforting skillet dish that combines the rich flavors of Sloppy Joes with tender potatoes, perfect for a busy weeknight dinner.

Ingredients

  • 1 pound ground beef (or ground turkey)
  • 4 medium potatoes, diced
  • 1 medium onion, finely chopped
  • 1 green bell pepper, diced
  • 2 cloves garlic, minced
  • 1 cup ketchup
  • 2 tablespoons Worcestershire sauce
  • 1 tablespoon brown sugar
  • 1 teaspoon chili powder
  • ½ teaspoon paprika
  • Salt and pepper, to taste
  • 2 tablespoons olive oil
  • Shredded cheese (optional, for topping)
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Prepare the potatoes by washing and dicing them into bite-sized pieces. Set aside.
  2. Cook the meat in a large skillet with 1 tablespoon of olive oil over medium-high heat until browned, about 5-7 minutes. Drain excess fat if necessary.
  3. Sauté the chopped onion, green bell pepper, and minced garlic in the skillet for about 3-4 minutes until softened.
  4. Combine ketchup, Worcestershire sauce, brown sugar, chili powder, paprika, salt, and pepper into the skillet. Simmer for 5-7 minutes, stirring occasionally.
  5. Cook the diced potatoes in the skillet with the other ingredients, add about ½ cup of water, cover, and reduce heat to low. Cook for 15-20 minutes until tender.
  6. Check for doneness by ensuring potatoes are fork-tender. Stir occasionally and add more water if it looks dry.
  7. Add shredded cheese on top during the last couple of minutes of cooking, if desired. Cover to melt the cheese.
  8. Garnish with chopped parsley before serving.

Notes

Use waxy potatoes like Yukon Gold for best texture. Adjust seasoning to taste.
