A rich, creamy Indian dish made effortlessly in a slow cooker, perfect for busy weeknights or gatherings.

Ingredients

  • 1 lb chicken breast, diced
  • 1 cup butter
  • 1 medium onion, chopped
  • 2 garlic cloves, minced
  • 1 inch ginger, minced
  • 1 can (14 oz) crushed tomatoes
  • 1 cup heavy cream
  • 2 tsp garam masala
  • 1 tsp cumin
  • 1 tsp turmeric
  • Salt and pepper to taste
  • Rice or naan bread for serving

Instructions

  1. Add the diced chicken, butter, chopped onion, minced garlic, and ginger to the slow cooker.
  2. Pour in the crushed tomatoes, heavy cream, garam masala, cumin, turmeric, salt, and pepper.
  3. Stir to combine all the ingredients evenly in the slow cooker.
  4. Cover and cook on low for 4-6 hours or on high for 2-3 hours. Check for doneness: the chicken should be tender and cooked through.
  5. Once cooked, shred the chicken if desired and stir the sauce to mix everything together.

Notes

Chicken breast works well here, but thighs can be used for a richer flavor. For a lighter version, substitute heavy cream with coconut milk.
