Ingredients

  • 1 pound boneless, skinless chicken breasts
  • 1 can black beans, drained and rinsed
  • 1 can corn, drained
  • 1/2 cup diced onion
  • 1/2 cup diced bell pepper (color of your choice)
  • 1 can diced tomatoes with green chilies
  • 4 cups chicken broth
  • 1 packet taco seasoning
  • Salt to taste
  • Pepper to taste
  • Shredded cheese for topping
  • Sour cream for topping
  • Tortilla chips for topping
  • Avocado for topping

Instructions

  1. Combine the chicken breasts, black beans, corn, diced tomatoes, taco seasoning, chicken broth, diced onion, and bell pepper in the slow cooker.
  2. Mix everything together until well combined, ensuring that the chicken is mostly submerged in the broth.
  3. Set the slow cooker to low and cook for 6-8 hours or on high for 3-4 hours.
  4. Shred the chicken directly in the slow cooker using two forks about 30 minutes before serving.
  5. Season the soup with salt and pepper to taste, adjusting for flavor.
  6. Serve the soup in bowls and top with your favorite toppings like shredded cheese, sour cream, tortilla chips, and avocado.
