Slow Cooker Sausage and Potato Casserole

This hearty, one-pot meal combines the rich flavors of sausage and cheese with creamy potatoes, making it a family favorite.

Ingredients

  • 1 (32 oz.) bag of hash browns
  • 14 oz. kielbasa, cut into small pieces
  • 1 small onion, diced
  • 2 ½ cups shredded cheddar cheese
  • 10.5 oz. can of cream of chicken or mushroom soup
  • ½ cup sour cream
  • Salt and pepper, to taste

Instructions

  1. Prepare the Slow Cooker: Grease the inside of your slow cooker with cooking spray or a little oil to prevent sticking.
  2. Combine Main Ingredients: In the slow cooker, combine the hash browns, kielbasa, diced onion, and 2 cups of shredded cheddar cheese. Mix it well.
  3. Mix Creamy Sauce: In a separate bowl, combine the cream of chicken soup, sour cream, salt, and pepper. Blend until smooth.
  4. Combine Everything: Pour the creamy mixture over the hash brown mixture in the slow cooker. Stir until everything is well-coated.
  5. Top with Cheese: Sprinkle the remaining ½ cup of cheese over the top of the mixture for a gooey finish.
  6. Cook: Cover and cook on low for 6-8 hours or on high for 4-5 hours. Check for doneness; the potatoes should be tender but not mushy.

Notes

Consider sautéing the sausage and onion for enhanced flavor. Monitor cooking time for fresh potatoes, and store leftovers properly.
