Stovetop Chicken and Noodles

A comforting and classic dish that combines tender chicken, flavorful broth, and smooth noodles, ready in under 30 minutes.

Ingredients

  • 2 cups cooked chicken, shredded
  • 4 cups chicken broth
  • 1 cup noodles (egg noodles or your choice)
  • 1 onion, chopped
  • 2 carrots, sliced
  • 2 celery stalks, diced
  • 2 cloves garlic, minced
  • 1 cup heavy cream
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

  1. Sauté the vegetables: In a large pot, heat a bit of oil over medium heat. Add the chopped onion, sliced carrots, diced celery, and minced garlic. Sauté for about 5 minutes until the vegetables are tender and fragrant.
  2. Add the broth: Pour in the chicken broth and bring it to a boil, scraping any bits stuck to the bottom of the pot.
  3. Cook the noodles: Stir in the noodles and cook according to package instructions, usually about 7-10 minutes, until they are al dente.
  4. Incorporate chicken and cream: Once the noodles are cooked, add the shredded chicken and heavy cream. Stir well to combine and watch for the soup to thicken slightly.
  5. Season it: Taste and season with salt and pepper to your liking.
  6. Simmer together: Allow the soup to simmer for a few minutes until everything is heated through, about 3 minutes.
  7. Serve: Ladle the chicken and noodle mixture into bowls and garnish with fresh parsley. Serve warm.

Notes

Feel free to use rotisserie chicken for convenience. Egg noodles are traditional, but you can swap in whole wheat or gluten-free noodles if desired.
