A delightful and easy dish packed with tropical flavors, featuring tender chicken, sweet pineapple, and a rich sauce. Perfect for family dinners or meal prep.

Ingredients

  • 4 boneless, skinless chicken breasts
  • 1 bell pepper, sliced
  • 1 cup pineapple chunks (canned or fresh)
  • 1/2 cup soy sauce
  • 1/2 cup brown sugar
  • 1/2 cup ketchup
  • 1 tablespoon minced garlic
  • 1 tablespoon minced ginger
  • Salt and pepper to taste
  • Green onions, for garnish

Instructions

  1. Prepare the sauce: In a bowl, mix together the soy sauce, brown sugar, ketchup, minced garlic, and minced ginger until well combined.
  2. Layer the chicken: Place the chicken breasts into the slow cooker and pour the sauce over the top. Make sure the chicken is well coated.
  3. Add the fruits and vegetables: Add the pineapple chunks and sliced bell pepper on top of the chicken.
  4. Slow cook: Cover and cook on low for 6-8 hours or on high for 3-4 hours, until the chicken is tender and easily shredded.
  5. Shred the chicken: Once cooked, shred the chicken with two forks and mix it with the sauce in the slow cooker for even flavor distribution.
  6. Serve and garnish: Serve the chicken over rice or noodles, garnished with sliced green onions for a pop of color and flavor.

Notes

Check the chicken at the minimum cooking time to prevent overcooking. Use fresh garlic and ginger for better flavor.
