A classic Italian-American dish featuring crispy breaded chicken cutlets topped with marinara sauce and melted cheese.

Ingredients

  • 4 boneless, skinless chicken breasts (pounded to an even thickness)
  • 1 cup all-purpose flour
  • 2 large eggs (beaten)
  • 1 cup breadcrumbs (Italian-style preferred)
  • ½ cup grated Parmesan cheese
  • Salt and pepper (to taste)
  • 2 cups marinara sauce
  • 1½ cups shredded mozzarella cheese
  • Fresh basil or parsley (for garnish)

Instructions

  1. Preheat your oven to 400°F (200°C). Season the chicken breasts with salt and pepper on both sides.
  2. Create a dredging station by placing the flour in one shallow dish, beaten eggs in another, and a mixture of breadcrumbs and Parmesan cheese in a third.
  3. Coat each chicken breast in flour, shaking off the excess, then dip it in the beaten eggs, and finally coat it in the breadcrumb mixture.
  4. In a large skillet over medium heat, add enough oil to cover the bottom of the pan. Once hot, carefully add the breaded chicken and cook for 4-5 minutes on each side until golden brown.
  5. Spread a thin layer of marinara sauce in a baking dish, place the cooked chicken on top, spoon more marinara sauce over each piece, and add mozzarella cheese.
  6. Bake in the oven for 15-20 minutes until the cheese is bubbly and golden.
  7. Garnish with fresh basil or parsley and serve hot.

Notes

For a healthier version, bake the chicken instead of frying and use low-fat cheese.
