Ingredients

  • 1 package large pasta shells
  • 15 oz ricotta cheese
  • 2 cups fresh spinach (or 1 cup frozen, thawed and drained)
  • 2 cups marinara sauce
  • 1 cup shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese
  • 2 cloves garlic, minced
  • 1 small onion, chopped
  • 1 tsp Italian seasoning
  • Salt, to taste
  • Pepper, to taste

Instructions

  1. Preheat your oven to 375°F (190°C) while you prepare the shells and filling.
  2. Boil the large pasta shells according to package instructions until al dente. Drain and set aside to cool slightly.
  3. Sauté minced garlic and chopped onion in a skillet over medium heat until they become soft and fragrant, about 3-5 minutes.
  4. Combine ricotta cheese, lightly wilted spinach, sautéed garlic and onion, Italian seasoning, salt, and pepper in a mixing bowl. Mix until well incorporated.
  5. Carefully fill each pasta shell with the ricotta mixture using a spoon or your hands.
  6. Spread a thin layer of marinara sauce on the bottom of a baking dish, then place the stuffed shells on top.
  7. Pour the remaining marinara sauce evenly over the stuffed shells, ensuring they are well covered.
  8. Sprinkle shredded mozzarella and grated Parmesan cheese over the sauce.
  9. Cover the dish with aluminum foil and bake for 25 minutes.
  10. Remove the foil and continue baking for an additional 10 minutes, or until the cheese is melted and bubbly.
  11. Allow the dish to cool slightly before serving.

Notes
